Chicken with Creamy Spinach and Cheese Sauce

Wash the spinach, chop, and set aside.

Place the chicken thigh on a cutting board and add salt and pepper.

Add olive oil to a large pan. When it's hot add the sliced garlic and lightly fry for a couple of minutes. Add the chicken thighs to the pan and lightly brown them over medium heat. Turn them occasionally so they cook evenly on all sides. Cook the thighs for about 8-10 minutes. Then remove from the pan and place on a plate.

Add the light cream, the grated cheese, and water to the same pan (using the same oil without cleaning). Mix everything. Add the spinach and as they cook you will notice that they will slowly reduce in volume. You can add a pinch of salt to the sauce. Cook for 3-4 minutes.

After this time add the chicken thigh to the pan and let them cook in the sauce for 20 minutes over low heat. Make sure the sauce is at your desired thickness. If the sauce is too thick, you can add more water (or broth). After the 20 minutes have passed you can turn off the heat and serve the chicken and sauce.
