Noodle Bowl with Broccoli, Chicken, and Bell Peppers

Dice the chicken into small cubes. Drizzle some olive oil into a large pan and cook the chicken until golden. Set the chicken aside for later.

Wash the broccoli and cut into medium-sized florets. Peel and finely dice the carrot, bell pepper, and garlic. Thinly slice the onion. Peel a piece of fresh ginger.

Use the same pan as before, without washing it, and add some more olive oil. Add all the vegetables you've just cut, along with the ginger. Cook for 6-7 minutes on medium heat, taking care not to burn them. Add the chicken and mix with the vegetables. Remove the ginger.

In a bowl add the soy sauce, water, and cornstarch. Mix well and then slowly pour into the pan with the vegetables and chicken. Cook on low heat for several minutes until the sauce thickens.

Meanwhile, put water to boil in a pot and cook the noodles. In about 3 minutes they'll be ready. Once cooked, drain, and add to the pan with the saucy vegetables. Mix well before serving.
Tips & Tricks
You can add any vegetable you have in your fridge to the dish.|If you don't want to eat chicken, you can substitute for beef, tofu, turkey, shrimp, etc.
