Preheat the oven to 350°F.

Grate the peel of an orange and set aside. Squeeze two oranges and set aside as well. Next, grate the ginger.

Place the pork on the cutting board. Remove the fat from the pork. Add some salt and pepper on both sides.

Use a large pan and add some olive oil. Once the oil is hot, place the pork and sear on both sides. It's not necessary to cook thoroughly, just 2-3 minutes on each side is sufficient. Once it's seared, place in an oven-safe dish.

Use the same pan you used to sear the pork. Add the grated orange peel, orange juice, grated ginger, and sugar. Mix these ingredients with a spoon for barely 1 minute. After this time, pour over the pork in the dish.

Place the oven-safe dish and bake for 40-50 minutes. Check on the pork every 10 minutes and use a spoon to baste the pork with the sauce.

After the indicated time, serve.
Tips & Tricks
Once done cooking the meat, if there is a lot of sauce leftover in the dish and it's too liquidy, you can put it in a pot and add corn starch to thicken it.
