Quinoa, Hummus, and Mustard Dressing Salad

quinoa

Rinse the quinoa under water. Add a cup and a half of water to a pot. Once boiling add the quinoa, a pinch of salt, and cook for about 20 minutes or until the seeds open. Remove, drain, and set aside.

Wash the vegetables: lettuce, carrot, tomato, radishes, and cilantro. Slice the lettuce and grate the carrot. Dice the tomato and finely chop the cilantro.

Add all of the vegetables you have just cut into a salad bowl. Add the cooked quinoa. Mix so that all of the ingredients are well integrated.

Prepare the vinaigrette. Place the mustard, honey, balsamic vinegar, olive oil, and a pinch of salt into a jar with a lid. Shake the jar well so that all of the ingredients mix well. Set aside.

Now put your tupperwares together. Fill each with salad, then add some hummus, some slices of radishes to decorate and then pour some of the honey mustard dressing you have just made.

Your tupperware is now ready to take anywhere!
Tips & Tricks
You can always substitute quinoa for rice, bulgur, or buckwheat.
In order to keep your salads from oxidizing in the tupperware, add a few drops of lemon juice, and you will see that they will stay fresh longer.
Another delicious option to dress this salad is with olive oil, lemon juice, salt, pepper, and garlic.
