Instructions

Wash the zucchini and use a mandoline slicer or a knife to cut into long noodle-shaped strips.

Peel and mince the garlic or use a mortar and pestle to mash it if you have one. Wash and chop the tomatoes.

Put a little olive oil into a skillet and heat. Then add the garlic and let cook slowly. After 3–4 minutes, add the zoodles and the onion. Fry for 5–7 more minutes, stirring often. Next, add the tomato together with a pinch of salt and stir for a couple of minutes.

Tips & Tricks

If you have cherry tomatoes in your fridge, use them instead of regular tomatoes. You’ll need 6 cherry tomatoes and only need to wash and halve them.

If you have sun-dried tomatoes, you can also use them in this dish. Cut in half and add to the skillet when you add the tomato. You can use 1/2 fresh tomato or 3 cherry tomatoes and a few sun-dried tomatoes.

If you have some black olives, toss a few over the zoodles for even more delicious flavor.

And if you feel like it, add a few pinches of oregano to the zoodles as a finishing touch.
