Apple and Carrot Soup

Peel and slice the carrot into semi-thin slices. Also, chop the leek and apple, without peel, into cubes.

Add some oil into a pot. Add the leek and sauté for 1-2 minutes. Now add the carrots and apple and sauté everything for 5 minutes.

Cover the vegetables with chicken broth, add some salt, and let it cook for 20 minutes. Cook until the vegetables become tender.

Add the vegetables and broth into a blender and blend well. Your soup is now ready to be served.
Tips & Tricks
If you don't have chicken broth, it's no problem. Substitute it for water.
You can add more broth or water to the soup, if you think it's missing any.
