Skillet of Potatoes, Eggs, and Tomatoes

Wash, peel, and cut the potatoes into small pieces.

Fill a large pan with water and add a little salt. Bring to a boil and add the potatoes. Cook for 10–12 minutes. If the pieces are small or medium, they should be done by this time, otherwise cook for a little longer until soft.

Wash and cut the tomatoes into medium chunks.

Heat a little olive oil in a skillet. Add the onion and lightly fry for a couple of minutes, stirring often. Add the boiled potatoes and fry with the onion for barely 1 minute, stirring to color on all sides. Add the tomatoes to the skillet with a little salt and let cook over medium-low heat for 5–6 minutes. The tomatoes will gradually soften. If the contents of the skillet look a little dry, stir in a little water.

Make two wells in the contents of the skillet and break an egg into each one, seasoning with a pinch of salt. Cover with a lid a let cook for a few minutes. Then serve in the skillet.
Tips & Tricks
Do you like your food with a little heat? If you do, add a little cayenne pepper or chili powder to the skillet when you add the tomato.
Finish by seasoning with a little pepper and a few minced basil leaves.
