Instructions

Peel and cut the sweet potato into small dice.

Mince the onion and dice the tomato.

Heat some olive oil in a skillet and lightly fry the onion, stirring often.

When the onion is soft, add sweet potato. Lightly fry everything for 5–6 minutes over low heat, stirring often.

Add the tomato to the skillet and season with a little salt and oregano. Cover with a lid and let simmer for 6–7 minutes.

Then lift the lid and break 2 eggs into the skillet, season with a pinch of salt. Replace the lid and let cook with the heat of the skillet. When the eggs are cooked as desired, turn off the heat, and serve in the skillet.
