Instructions

Mince the garlic and lightly fry in a skillet with oil (if you like heat, add a cayenne pepper.)

Wash the tomatoes and cut into medium dice. When the garlic has colored, add the tomatoes to the skillet and season a little salt. Lightly fry for 5–6 minutes, stirring often, over medium-low heat. The tomatoes will gradually soften.

Make two wells in the tomatoes and break and egg into each one, seasoning with a pinch of salt. Cover with a lid a let cook. If you have a little grated cheese in your fridge, sprinkle a little around the eggs as they set.

Serve the fried eggs and tomatoes in the skillet accompanied with a few slices of bread. You'll need it to mop up every last bit.

Tips & Tricks

You can sprinkle a little oregano over the skillet. Or, if you prefer, sprinkle with a little chopped parsley or cilantro.

As we said earlier, you can sprinkle a handful of cheese over the skillet. Use whatever cheese you have. We used Parmesan cheese and it was delicious.
