Eggplant Skillet with Tomato Sauce and Eggs

Instructions

Slice the onion. Wash and slice the eggplant, and finely chop the tomato.

Drizzle some oil into a pan and when it's hot, fry the onion. When the onion is tender, turn off the heat and remove the onion and set aside for later.

Add some more oil if necessary, to the same pan used to cook the onions, and cook the eggplant on both sides.

Add the onion you had set aside, the chopped tomato and some salt. Cook for 5-6 minutes over medium-low heat. Little by little the tomato will tenderize.

Make 2 holes in the tomato sauce you have just created and place the eggs with a pinch of salt. Place the lid on the pan and let it cook.
Tips & Tricks
If the eggplant is small then you may have to use all of it, but if it's medium/large you can just use half.
If you like spice, this is a great dish to add some.
