Peel the garlic and remove the green core.

Wash and peel the tomatoes and apple and cut everything into chunks.

Put the tomatoes, apple, and garlic into a blender or food processor and add a pinch of salt. Blend well.

Continue to blend while pouring in the olive oil in a thin stream until the mixture thickens (a little like mayonnaise). Chill in the refrigerator so it’s refreshing.
Tips & Tricks
You can serve the salmorejo drizzled with a little apple cider vinegar for added flavor.
