Preheat the oven to 360°F.

Wash and peel the apples. Core and cut into medium dice.

In the bowl of a stand mixer, briskly beat the eggs with the sugar.

Gradually add the flour and baking powder, mixing well to incorporate. You can use either the paddle or whisk attachment.Grease the baking pan you’re planning to use with butter and dust with flour.

Line the bottom of the pan with the diced apples, then pour in the batter, smoothing the surface so there are no gaps.

Bake at 360°F, about 40 minutes. The cake will be ready when you prick the center with a toothpick and it comes out clean.

Take the cake out of oven and let cool before turning out.
