Toast the bread.

In the meantime, open the avocados, scoop out their flesh, and mash with a fork. Add a pinch of salt and mix in.

Open a can of corn kernels, put a few tablespoons into a strainer, and rinse under running water. Pat dry with paper towels and mix into the mashed avocado.

Spread the avocado and corn mixture over each piece of toast. Finish by sprinkling a few handfuls of goat cheese over the top and season with a pinch of pepper.
Tips & Tricks
If you have any red or white onion, you can mince a little and add to the avocado and corn mixture.
