Instructions

Peel the shrimp, making sure to remove any traces of shell, and cut into small pieces.

Wash the lemon. Grate the zest into a bowl. Squeeze the juice into the bowl and add the olive oil and a pinch of salt. Mix well. Add the shrimp pieces to the bowl and marinate for 10 minutes.

In the meantime, scoop out the seeds from the 1/2 pomegranate.

Cut open the avocados and scoop out and dice the flesh.

Add the diced avocado and pomegranate seeds to the bowl with the shrimp and mix well, coating well with the oil.

Optionally, if you like cilantro and have some in your fridge. mince a generous handful and add to the tartare.

Serve accompanied with Melba toast, bananas, or anything you like.
