Avocado, Spinach, and Egg Sandwich

Instructions

Cut the onion into very thin strips and lightly fry in a skillet with oil over low-medium heat. When soft, take out and drain on paper towel.

Cut open the avocados, scoop out their flesh, and mash with a fork. Add a pinch of salt to the mixture and stir in.

Wash the spinach and dry using a clean cloth.

Cook the eggs. Do them fried, poached, hard-boiled, microwaved... any way you like.

Slice the bread rolls across the middle and toast. Spread a little avocado over the the bottom half of the bread roll. Add a handful of spinach and a little onion, and top with one egg. Spread the top half with a little more avocado and close the sandwich. Repeat to make a second sandwich.
Tips & Tricks
Use whole-grain bread because it’s a lot more nutritious than white bread.
