
Basil, Spinach and Pasta Soup

vegetable broth

Instructions

Heat the oil in a large pan over medium heat. Add the ground pepper. After 1 minute, pour in the vegetable broth and add a pinch of salt. Bring to a boil.

Add the pasta and cook until still a little firm. Don’t let it soften too much.

While the pasta is cooking, combine the basil, spinach, juice of 1/2 lemon, and 1/2 cup broth from the pan (take care not to burn yourself) in the blender and blend well.

When the pasta is ready, pour in the green mixture you've just made and sprinkle with ricotta cheese. Stir well.

Sprinkle a few basil leaves on top and serve immediately.
Tips & Tricks
If you have a can of corn or corn kernels, you can add these in the last step, just before serving.
