Instructions

Wash the quinoa under water. Pour 2 cups of water for every 1 cup of quinoa in a pot. Put it to boil and add the quinoa and cook for approximately 20 minutes, until the seeds open and cook.

Finely slice the onion and red bell pepper.

Add some olive oil in a pan and heat it up. Add the onion and bell pepper to the pan and cook for 3-4 minutes.

Next, add the navy beans (previously drained) and sauté for several minutes with the vegetables.

Add half a cup of quinoa, the tomato sauce, some salt, and mix well. Let it cook over the heat for several minutes and then add the contents into an oven-safe dish. Sprinkle some grated cheese on top and put it in the oven to cook au gratin for 5-8 minutes at 400°F, or until the cheese has melted. Remove from the oven and serve.
