Instructions

Wash and cut the broccoli into small pieces. Cook for just 3 minutes in a pan of boiling water. Then drain and set aside for later.

Wash and slice the mushrooms. Mince the onion. Put a little olive oil into a skillet and lightly fry the onion and mushrooms, stirring often. Cook over medium heat for 4–5 minutes. Then turn off the heat and set aside for later.

In a food processor or blender, chop up the broccoli, mushrooms, and onion. Pulse a couple of times (don’t overdo it; you don't want to make a puree). You can also use a knife for this.

Combine the chopped vegetables, 1 beaten egg, and the flour in a bowl. Mix well.

Use your hands to shape the mixture into small rectangular cakes (you can also make them any shape you like) and arrange on a baking tray lined with parchment paper. Bake at 400ºF for 10 minutes, then turn over and bake for 10 more minutes. Then take out of the oven and serve.
