Wash and cut the broccoli into small florets. Bring a pan of water with a little salt to a boil and cook the broccoli for 4–5 minutes.

Crack the eggs into a blender or food processor and add the broccoli and a little salt. Pulse for a few seconds.

Heat a little olive oil in a skillet. Pour in the beaten egg and broccoli mixture and cook, giving it an omelet shape for few minutes before serving.

Serve on a plate with a little rice for a complete and tasty meal.
