Caprese Egg Toasts

Begin by spraying a medium-sized skillet with nonstick spray. Heat the pan over medium heat and crack the eggs into the preheated skillet.
Next, sprinkle the eggs with salt and pepper, then place the lid over the top of the eggs and allow them to cook until the yolks have set, approximately 7 to 8 minutes.
While the eggs cook, slice the tomato into slices and toast the bread.
Place the toasts on serving plates and drizzle them with olive oil, then top them with the eggs and tomatoes.
Then, sprinkle with the cheese and dried basil.
Last, drizzle with the balsamic vinegar and serve.
Tips & Tricks
We used mozzarella cheese for that classic caprese look.
