Preheat the oven to 350°F.

Crush the carrots along with the deseeded dates.

In a bowl, mix the coconut oil, egg, and yogurt. Next, add the flour, yeast, and cinnamon. Mix in the carrots.

Divide the batter into the muffin molds and bake for 25 minutes.

Let the muffins cool completely and then spread the mascarpone cheese on top. You can decorate with some crushed walnuts on top or with some grated carrots.
Tips & Tricks
To add more flavor, you can use a bit of ginger and nutmeg to the batter.
You can also add a tablespoon of toasted almond butter to the batter for added flavor.
You can mix the mascarpone cheese with a bit of honey or another sweetener if you would like to improve the flavor of the muffins.
