Wash and cut the cauliflower. Add the pieces of cauliflower into a pot and cover with water to cook it. Add some salt and then place on the stove. Cook for approximately 10 minutes. After this time, drain and place into the food processor. Little by little (surely in a few steps) chop it and then place it in a large bowl.

Chop the cheddar cheese in the food processor as well. If your cheese is already grated, then this step is not necessary.

Add the cheese into the bowl with the cauliflower along with the breadcrumbs, beaten egg, salt, and if you're up for it, an herb of your preference like cilantro or parsley. Mix well until you are left with a gritty mixture.

Make as many patties as possible using all of the mixture. Make them the size that you desire.

Fry them in a pan with hot oil. After, place them on a plate with a paper towel to absorb the excess oil.
