Combine the chia seeds with the milk, vanilla essence and let stand for 15 minutes. The seeds will gradually absorb the milk and form a jelly.

Add the honey and a kiwi in your food processor and blend for 1 minute on high.

Serve in 2 glasses and sprinkle on the other kiwi, chopped into pieces.
Tips & Tricks
If you’re vegan, use plant-based milk and agave syrup.
Feel free to use 1/2 banana instead of honey to sweeten the mousse naturally.
If the chia seeds do not change texture after soaking in the milk for 10 minutes, the chia seeds may have expired. This might be because the container was not airtight. Don’t throw them away; you can use them in smoothies. But to make this mousse, you’ll need to buy some fresh ones.
