Chicken and Mashed Potato Pots

Peel and dice the potato. Fill a pan with water and bring to a boil. Add 1 teaspoon salt and cook the diced potato until tender when pricked with a fork. This should take around 10–15 minutes. Drain and mash well with a fork.

Mince the onion and finely chop the chicken breast.

Heat a little olive oil in a large skillet and lightly fry the onion. When it begins to soften, add the chopped chicken breast and fry together with the onion, stirring often, until cooked through. Season with a little salt.

Add the mashed potato to the skillet and mix with the chicken. Add the milk to the ingredients for creaminess and let cook for a few minutes. Turn off the heat.

Transfer the contents of the skillet to several ramekins or containers. Optionally, you can sprinkle grated cheese over the top and place under the oven broiler for 5 minutes. Serve immediately.
Tips & Tricks
You can use light cream instead of milk. If you want to avoid lactose, use tomato sauce instead of milk for a creamy consistency.
You can also add extra flavor by using spices, such as a teaspoon of cumin, curry powder, or turmeric.
