Instructions

Begin by boiling the chicken in the chicken broth in a medium-sized pot on the stove for approximately 20 minutes or until it the center of the chicken reads 165 degrees.

Meanwhile, plug in your waffle maker to preheat. Then combine the flour, baking powder, salt, sugar, milk, egg, and oil in a medium-sized bowl. Mix until well combined.

Spray your waffle maker with nonstick spray and pour one serving into the waffle maker. Allow the waffle to cook until browned. Repeat with each waffle serving, then set the waffles aside.

Drain the chicken broth from the chicken and allow it to cool slightly before shredding.

While the chicken cools, wash the tomatoes and lettuce. Then slice the tomatoes for the sandwiches and tear the lettuce into pieces.

Assemble each sandwich by spreading 1 tbsp of mayonnaise on each waffle, then top with the shredded chicken, sliced tomatoes, and romaine. Add the remaining 1 tbps of mayonnaise to the other waffle and place it on top to finish the sandwich.
