Chicken Fried Rice with Vegetables

Start by preparing the rice. For this, add a tablespoon of olive oil in a pot, and once it is hot, add the sliced clove of garlic. When it begins to lightly brown, add the rice. Stir it for a couple of minutes before adding 2 cups of hot water with a pinch of salt. Cook over high heat for 7 minutes and then turn down the heat to low and cook for 8 more minutes. If in this time, it absorbed all of the water and is still hard, add more water. Let it sit for a little bit.

Place the chicken on a cutting board and cut into medium size pieces. Add some salt and pepper.

Drizzle some olive oil into a pan and cook the chicken for 3-4 minutes, until it browns. Once it's ready place on a plate and set aside.

Chop another garlic clove, the onion, and the carrot into small pieces. Using the same pan as before but with some more oil, cook these vegetables. Cook for 4-5 minutes.

Next, add the chicken to the pan along with the soy sauce and mix the ingredients.

Lastly, add the rice to the pan and mix so that all of the ingredients are well mixed together. Serve and enjoy!
