Chicken Skewers with Yogurt and Cilantro Dressing

Mince 1 clove of garlic. Mix in a bowl with 3 tablespoons olive oil, 2 tablespoons lemon juice, and a little salt and pepper. Stir and set aside for later.

Cut the chicken breast into cubes. Put into a bowl and pour over the marinade you’ve just prepared. Stir with a spoon so that the all the pieces of chicken are well coated in the oil. Marinate in the fridge for 10 minutes.

In the meantime, wash, dry and mince the cilantro. Also mince the other garlic clove.

In a bowl, combine the yogurt, the minced cilantro, and garlic with 2 tablespoons lemon juice, 1 tablespoon olive oil, 1/2 teaspoon salt, and a pinch of pepper. Stir well.

Cook the marinated chicken in a hot skillet or griddle with the oil. Then remove.

Take 1 wooden skewer and thread with 4–5 chicken pieces.

Arrange the skewers on a tray and serve with the yogurt and cilantro dressing.
