Wash and grate the zucchini. Squeeze with your hands or press on a colander until all the excess water is removed.

Heat the water up a little bit.

Add the zucchini, corn flour, warm water, and salt to a bowl. Mix with your hands and start forming the arepas. Make sure they are not too thick so later they cook all the way through.

Grease a pan and cook the arepas about 5-7 minutes on each side. Place on a rack and let them cool a little bit. Once they are warm, use a knife to slice them lengthwise open. Open them so you can add the filling later.

Preparing the filling is easy. Cook the chicken breast with a bit of salt in boiling water. Once it's cooked, shred it in your food processor.

Mix the shredded chicken, avocado, cream cheese, some chopped cilantro, a pinch of salt, and some lemon/lime juice in a bowl.

Fill each arepa with the filling you've just prepared. Enjoy!
