Cod with Potatoes and Bell Peppers

Prepare the ingredients the following way: mince the garlic, slice the onion, and dice the peppers and zucchini into medium-sized pieces. Peel the potato and dice into small pieces.

In a large pan add some olive oil and lightly fry the garlic, onion, and bell peppers. After 2-3 minutes add the zucchini and potatoes and cook for 5 minutes on medium heat.

Add the tomato puree, a bit of salt, and if you'd like, a bit of sugar to lower the acidity from the tomato. Let it cook on low for about 20 minutes. If at this time you observe that it becomes dry, add a bit of water or more tomato. Once the zucchini and potatoes are tender, turn off the heat (you'll know by pricking with a fork).

In another pan cook the cod filets with a bit of salt.

In each plate add the potatoes with the vegetables and sauce followed by the cod on top.
Tips & Tricks
You can substitute the tomato puree for tomato sauce.
Make sure that you don't cut the potatoes too big because they will delay the cooking time of the recipe since they take longer to cook than the veggies.
