Cream of Asparagus and Zucchini

Chop the onion and asparagus. Add a drizzle of oil in a pan and cook the vegetables you have just cut for 10 minutes or until the onion is tender.

Wash and chop the zucchini and add to a pot along with the asparagus and onion. Add some salt and cover everything with water. Cover the pot and cook for 20 minutes, until the zucchini is tender.

Once ready, mash or blend until there are no lumps left and adjust the salt if necessary.
Tips & Tricks
You can save a couple heads of asparagus to decorate when you serve the soup.
To add creaminess you can add a bit of whipped cheese, feta cheese, yogurt, or coconut milk (for a vegan version).
Add a bit of pepper and garlic powder to add more to the flavor of the soup.
