Creamy Carrot and Spinach Soup

Peel and slice the carrots and potato into rounds. Wash the spinach very well and slice it, along with the onion.

Drizzle some olive oil in a pot and sauté the vegetables you have just cut except the potato over medium heat. Cover them with water after about 3-4 minutes and then add the potato and salt. Cover with a lid and let it cook for approximately 20 minutes, until the vegetables are tender.

Next, place all of the ingredients into a blender and blend very well. This easy and simple. You can now serve your delicious creamy spinach and carrot soup.
Tips & Tricks
You can use fresh spinach or frozen spinach for this carrot and spinach soup.
If the carrots are thin, add some more to the puree.
If your potato is very big, only use half.
You can use chicken stock instead of water to cover the spinach to give this puree an extra touch of flavor.
You can enjoy this soup either hot or at room temperature depending on the season.
