Creamy Cauliflower with Curry Soup

Instructions

Chop the onion and garlic and cook in a pot with a bit of olive oil for 10 minutes, or until the onion becomes transparent.

Add the cauliflower florets (the smaller, the less time it'll take to cook), the curry, salt, and coconut milk. Cover the ingredients with water.

Cover the pot with a lid and let it cook between 20 and 30 minutes, until the cauliflower is tender.

Blend the ingredients in a blender or food processor and adjust the salt if necessary.
Tips & Tricks
You can add a teaspoon of powdered garlic and a pinch of black pepper to give this dish more flavor.
You can also substitute the salt for half a tablet of concentrated broth if you would like.
