Creamy Mushroom and Potato Soup

Start by preparing the ingredients the following way. Peel the potatoes and cut into medium size pieces, the size you prefer to eat in a soup. Finely chop the garlic and onion, and lastly, slice or chop the mushrooms.

Add some olive oil into a pot. When it's hot add the garlic and onion and fry for several minutes over medium heat, taking care not to burn them.

Add the mushrooms to the pot and cook for 3-4 minutes, until they begin to brown.

Add the potatoes to the pot and cover the ingredients with the water and the milk. Add some salt and pepper and cover with a lid. Let it cook over medium heat for approximately 20-25 minutes. After this time check to see if the liquid has reduced and that the soup tastes good. Add more salt if necessary and let it cook longer if you would like a thicker soup, or add more water if you would like it thinner.
Tips & Tricks
You can use plant-based milk if you're vegan.
We sprinkled some chopped cilantro on top.
If you would like to make the soup thicker, you can substitute the milk for heavy cream.
