Creamy Pumpkin Soup

Dice the potato and butternut squash and finely slice the onion.

Put a little oil into a pan and lightly fry the onion for several minutes, stirring often, until golden.

Add the butternut squash and cook the same way for 3–4 minutes over medium heat. When the butternut squash is soft, add the diced potato and pour in enough water to cover all the ingredients. Season with a little salt. Cover with the lid and cook for 20 minutes over medium heat.

Then transfer the contents of the pan to a blender, puree, and your soup is ready.
Tips & Tricks
You can substitute the onion for leek. And if you'd like to give the puree more flavor, you can substitute the water for chicken broth. You can also add a celery stick when adding the other vegetables. When you blend the puree, remove the celery stick. If you would like your pumpkin puree to be thicker, add more potato.
