Creamy Zucchini and Apple Soup

Peel and slice the zucchini and leek. Dice half an apple.

Pour a little olive oil into a pan and lightly fry the zucchini and leek over medium heat, stirring often. After 3–4 minutes, cover with water, add the apple, and season with salt. Cover with a lid and cook, about 20 minutes, until you see the vegetables are tender.

Transfer the contents of the pan to a blender and puree. Now it’s ready to serve.
Tips & Tricks
The zucchini must be fresh, otherwise it will turn the soup bitter and ruin it.
You don't have to peel the apple. You can use any variety.
