Wash and slice the cucumber.

Wash and chop up the apple.

Combine the water, cucumber, apple, plain yogurt, salt, pepper, olive oil, and vinegar in a blender or food processor. Blend well for several minutes, and your gazpacho is ready.
Tips & Tricks
The plain yogurt must be unsweetened for this recipe. It is best to use green apples.
Gazpacho is best served cold, so use chilled water.
White wine vinegar is recommended when making gazpacho.
