Curry Rice with Lentils and Zucchini

Instructions

Add a tablespoon of olive oil in a pot and once it's hot add the sliced garlic clove. Once it begins to become golden add the rice. Stir for several minutes and then add about 1 3/4 hot water and a bit of salt. Add some peeled fresh ginger, curry powder, and turmeric. Cook on high heat for 7 minutes and then lower the heat and cook on low for 8 more minutes. If in this time the rice has absorbed the water and is still hard, add more water. Let it stand with the lid on for a while.

While the rice is cooking, take advantage and get ahead with the rest of the recipe. Peel the carrot and finely dice. Wash and dice the zucchini into medium-sized pieces. Dice the onion.

In a large pan add some olive oil. Once it's hot add the vegetables you have just diced and cook for 7 minutes.

After this time add the drained and cooked lentils and mix with the vegetables. Add some salt.

Once the rice is cooked, add to the pan with the vegetables and mix together.
Tips & Tricks
You can serve accompanied by a handful of cashews.
You can add a bit of cardamom when you are cooking the rice to give it more flavor.
We used basmati rice.
