Instructions

Roast the eggplant, unpeeled onion, and bell peppers at 480°F for 45 minutes. Let cool and peel.

Cut the flesh into tiny dice.

Mix in a bowl with the eggs, salt, pepper, and breadcrumbs until smooth. Add more breadcrumbs, if needed. Let stand for 30 minutes.

Shape the mixture into patties and fry in a skillet with olive oil over medium heat. When done on one side, flip with a spatula.
