Peel the potatoes and dice.

Wash and cut the bell pepper and onion into cubes.

Add a generous amount of olive oil into a pan and fry the potatoes. This can take about 10-12 minutes.

In another pan, while the potatoes are frying, add some olive oil and lightly fry the bell pepper and onion. Cook for approximately 10 minutes. Add some salt.

Mix the potatoes with the sauteed vegetables and then add the eggs (cooked the way you like: in the microwave, in a pan, hard-boiled, poached, etc.
