Eggs with Zucchini and Tomato

Wash the tomatoes and zucchini and cut into medium dice.

Peel and mince 1 clove of garlic.

Put a little olive oil into a large skillet and heat. Fry the garlic for 1 minute, stirring often.

Next, add the zucchini and fry for 3–4 minutes over medium heat, stirring often.

Add the tomato and season with little salt and cumin (optional). Cook over medium heat for 10 minutes. The liquid released by the tomatoes will gradually reduce.

Finish by adding several tablespoons of tomato sauce. Mix everything well and cook, about 5 more minutes.

Make use of these 5 minutes to cook the eggs. There are many ways to cook the eggs: You can make two spaces in the contents of the skillet, crack in two eggs, season with a pinch of salt, cover with a lid, and let cook with the heat of the skillet.
