Instructions

Put water to boil in a pot and cook the eggs for 10 minutes. Remove and place in an ice bath and peel.

Rinse the garbanzos with cold water and place in a bowl.

Add the rest of the ingredients to the bowl. Make sure to chop the onion, bell pepper, tomato, avocado, and cooked egg into cubes. Peel and shred the carrot. You can either shred or chop the carrot (whichever you prefer).

Drain the water from the tuna, shred it and add it to the bowl.

Prepare the vinaigrette. Pour oil, vinegar, and a pinch of salt into a cup. Mix well and drizzle onto your garbanzo salad.
