Instructions

Boil the gnocchi in a pan with water and a pinch of salt for the time shown on the package. Then drain and set aside.

Wash and cut the mushrooms into pieces. Mince the onion. Heat a little oil in a skillet and add lightly fry the onion, stirring often. When the onion has softened, add the mushrooms and fry for a few minutes. Season with a small sprinkling of salt.

Combine the Gorgonzola cheese, dates, minced using a food processor or a knife, and milk in a pan. Cook over low heat so the cheese gradually melts. Stir often using a spoon.

Transfer the gnocchi into the skillet with the onion and mushrooms. Stir and pour in the Gorgonzola and date sauce. Cook over low heat for a couple of minutes to infuse the flavors. Serve on a plate and enjoy.
Tips & Tricks
If your dates have pits, remove these first. Then chop them up in a food processor, or use a knife if you don’t have one.
You can use white mushrooms instead of wild mushrooms if you don't have any.
Feel free to use cream or light cream instead of milk to make the sauce creamier, though this will also add a few more calories.
