arugula

red onion

mayonnaise

Instructions

Fill a pot with water and boil. Add a pinch of salt and the eggs. Reduce the heat and cook for 14 minutes.

Cut the onion and celery, and place in a small bowl. Introduce the mayonnaise, another pinch of salt, parsley, and pepper. Mix.

When the eggs are ready remove from the pot and remove the shell, and dice. Add to the bowl and mix.

Toast the bread. Add a tablespoon of the egg mixture and spread it out. Cover with arugula. You can serve as a one or two layer sandwich.
Tips & Tricks
You can use whichever type of leafy green vegetable if you don't have arugula.
