Preheat the oven to 400°F.

Wash, peel, and finely slice the potatoes and place in a baking dish.

Mix the potatoes with salt, thyme, rosemary, and a bit of olive oil. Bake for 20 minutes.

Mix the mustard, honey, and olive oil in a small bowl. Brush this sauce on the pork chops.

When the 20 minutes have passed, remove the baking dish and place the pork chops and broccolini on top. If any sauce remains you can cover the broccolini with it.

Bake for another 15-20 minutes. Check to see that the pork chips are cooked thoroughly, but do not dry out.
Tips & Tricks
You can add a bit of garlic powder and black pepper to give more flavor to the potatoes.
You can add more vegetables such as carrots or onion when you roast the potatoes.
We used broccolini which is similar to broccoli.
