Lentil and Cheese Nachos

Instructions

Preheat the oven to 360ºF.

Finely chop the onion and green bell pepper.

Pour olive oil into a pan or pot. When the oil gets hot add the chopped bell pepper and onion and sauté for over low heat until tender.

Add the lentils and cook together for several minutes.

Pour in the tomato sauce and the cumin, and cook over low heat for 5-7 minutes. Cooking on low heat will allow of the flavors to blend nicely.

Place the tortilla chips on an oven safe dish (large enough to hold the nachos). Evenly add the lentil mixture on top of the chips, followed by several handfuls of cheese (adding a handful of shredded cheddar and one of mozzarella turns out best).

Place the nachos in the oven and broil for several minutes, until the cheese fully melts. Once the cheese has melted, take out of the oven and enjoy.
Tips & Tricks
We found that serving the nachos with the following toppings makes it even more amazing. Finely chop a tomato, some onion, and cilantro. Place these ingredients into a bowl. Add some lemon juice, a few drops of hot sauce, a pinch of salt, and mix together. You can also cut an avocado, dice the flesh, and serve on the side or on top of the finished nachos.
If while cooking the lentils you see that they are dry, or need to be juicier, you can add a tablespoon more of tomato sauce or water.
