Instructions

Dice the onion and peel the garlic. Add both vegetables into the blender and blend well until it forms a puree. Set aside.

Wash the celery and finely dice. Peel and slice the carrots.

Add the chopped tomato into the blender (washing the blender isn't necessary) and blend.

Add a drizzle of olive oil into a pot. When it's hot add the blended onion and garlic and sauté over medium heat for 2 minutes.

Add the celery and carrot you have cut into the pot and cook for 3-4 minutes.

After this time add the lentils and cook together with the vegetables for just a couple of minutes.

Incorporate the lentils, water, tomato puree, ground cumin, and the salt. Raise the heat to the highest level and bring to a boil. Once it begins to boil, lower the heat and cook on low until the vegetables and the lentils are tender. This could be about 35 minutes (if you use a pressure cooker it will be less time).

If you would like a faster version of this recipe, use pre-cooked canned lentils.
