Macaroni with Tomato and Spinach

Instructions

Put water to boil in a pot and cook the pasta for the time indicated on the package.

Wash the spinach and slice. Finely chop the onion and the tomatoes.

Add olive oil to a pan and cook the chopped garlic and onion. After 3 minutes add the tomato and let it cook over low heat for 5 minutes.

Add the spinach to the pan. You will see that the spinach might spill over the side, but with time it will decrease in volume. Add salt. Lower the heat a bit and let it cook for 10-15 minutes. If you notice it has dried too much, add some water to the pan.

Mix the macaroni into the sauce in the pan. Stir and make sure the sauce covers all of the pasta.
Tips & Tricks
You can grate some cheese on top and put it in the oven to cook au gratin to elevate this dish.
You can also add tomato sauce if you don't have fresh tomatoes at home.
