Instructions

Beat the eggs with a pinch of salt. Set aside.

Chop the onion, red bell pepper, and the green bell pepper into small pieces.

Add some olive oil into a pan and cook the chopped vegetables once it's hot. After 4-5 minutes add the drained corn and cook for about 1 minute with the vegetables.

Mix the beaten eggs you set aside with the cooked vegetables in a microwave-safe dish.

Place the bowl with the eggs into the microwave for 10-11 minutes at 800W. Prick with a toothpick and see if it is cooked through and then put it in for 1 more minute in succession if necessary.

Let it cool a bit before removing from the dish. Accompany with a simple lettuce salad.
