Instructions

Slice the eggplant into about 3/4-inch-thick rounds.

Arrange the slices on a baking sheet. Season with salt and pepper, and drizzle with olive oil. Bake in a hot oven (360°F) for 15–20 minutes.

While the eggplant slices are in the oven, mince the onion, garlic, and tomato.

Heat the olive oil in the skillet and fry the onion and garlic for 3–4 minutes, stirring often. Then add the tomato and tomato sauce. Mix well, season with salt and pepper, and let cook for 10 minutes. In the meantime, grate or slice the mozzarella.

Take the eggplant out of the oven. Spread each eggplant slice with a little of the tomato, garlic, and onion mixture. Top with mozzarella. Return to the oven for 5 minutes to melt the cheese. Serve and enjoy!

You can replace the mozzarella for any other type of cheese that melts well.
You can get creative with this recipe, so try improvising with the ingredients. For example, you can add chopped up ham or bacon.
Sprinkle a little oregano on the mini pizzas for extra flavor.
