Instructions

Cut the onion into thin slices and peel and chop the carrot.

Add a drizzle of olive oil in a pan. When hot, add the onion and lightly fry over medium heat for 1 minute.

Then add the chopped carrot and continue to fry the vegetables, stirring occasionally, for a few more minutes.

Add the cooked navy beans and cook together with the vegetables for a couple more minutes.

Add the spinach and enough water (or broth, if you have any) to cover the ingredients. Turn up the heat and bring to a boil. Then reduce to low. Season with salt and simmer for 20 minutes. Then turn off the heat and serve.

Tips & Tricks
